Hii! Morning! So glad you are here reading some GOOD NEWS! Saturday is Pi Day (3.14), that's tomorrow! I have made a short list of places to find PIES for you to eat! This is Gina btw.
Two Fat Cats Bakery: Loads of pie. Savory hand pies, sweet pies, daily pies, seasonal pies, mini pies, and well on their website they even say they have 47 flavors of pie! Located in Portland and South Portland. They also ship nationwide!
Wicked Whoopies: Bakeries are located in Freeport and Farmingdale, the flavor options are almost endless… They have a few Gluten-free options if that is something you're into! W.W. also has JUMBO Whoopie pies!
Cape Whoopies: Head over into South Portland to the Whoopie Pie Cafe, you can call ahead and they will have it ready for pick up! They will let you know what's in-stock or you can go to their website and have it shipped you're too far!
Tandem Coffee and Bakery: Seasonal pies on deck!! Last year they had a Maple Brown Butter Custard Pie to celebrate Maine Maple Sunday (March 22), maybe they'll have that again too?
Night Moves: Blueberry Pie and Uncommon Apple pies are by online order!
Bam Bam Bakery: Chocolate Pecan, Apple, Triple Berry, and Blueberry Peach are the glorious options in the Old Port.
Do you see a trend?? Most of these pies are SEASONAL! Why not celebrate Pi day by supporting local bakeries or make one yourself like I did! Pictured above is my Chocolate Pi(e) during the Harvest Pi Challenge.
🍏Recipe: (yield one 9" pie)
🍁crust ingredients:
~10 oz plain potato chips, source- Fox Family Potato Chips
~6 oz ginger snap cookies
~1/4 cup whole wheat flour, source- Maine Grains
~6 tablespoons of plant butter
🍁chocolate filling:
~16 oz tofu, source- heiwa tofu
~5 tablespoons oat milk
~4 tablespoons maple syrup, sourse- Strawberry Hill Farms
~14 oz semi-sweet chocolate chunks
~1.15 oz hazelnut & almond butter
🍁toppings:
~5 apple slices, source- Portland Co-op, Ricker Hill Orchards
~20 chips
~ sprinkle sea salt with sea veg, source- Maine Coast Sea Vegetables
🍏To make apple chips: Bake the slices in the oven for ~2 hours at 225°F. Wish I had a dehydrator...
🍏To make the crust: Preheat the oven to 350°F. In the food processor, pulse ginger snaps until finely ground, take out and save. Next pulse chips until finely ground. Add flour and melted butter until combined. Press into pie pan and bake for 12-15 minutes.
🍏To make filling: Drain tofu. Cut tofu into cubes and put into a food processor. Add oat milk, maple syrup and blend until smooth. Add hazelnut & almond butter, blend until smooth. Melt chocolate and pour into the bowl of the food processor. Blend until incorporated.
🍏To make pi(e): When the crust is cooled, pour the filling on top and refrigerate for 1-2 hours. Then top with apple chips, salt and potato chips.
